Fredericksburg was laid out by German settlers in 1846, and you can still hear it: Main Street is Hauptstrasse to old-timers, the Marktplatz anchors the center of town, and the octagonal Vereins Kirche sits right where the original did. Then the Hill Country takes over. Peach stands open on the highways by May, the wineries along 290 pour from tasting rooms set in limestone and live oak, and seventeen miles north the pink granite dome of Enchanted Rock rises four hundred feet over the scrub, best climbed at first light before the summer heat.
